PARMENTIER (Antoine-Augustin).

Treaty of the chestnut.

[Bastia, Paris : Monory, 1780]. - Collection in-8, 191 x 122 : brown half-basin with parchment corners, smooth spine decorated, yellow edges (early 19th century binding).

First edition of one of the rarest treaties of the agronomist-philanthropist Antoine-Augustin Parmentier.

Following the famous Parfait boulanger published in 1778, this work is part of the series of treatises or memoirs that Parmentier published on economical, cheap and above all nutritious foods for the people, such as potatoes, corn, milk, grains, etc. He studies here the chestnut in which he is the first to have noted the presence of sugar; He speaks first of the chestnut tree, of the chestnut itself, then approaches its conservation, gives an analysis, presents the method of drying practiced in the Cevennes, deals with the chestnut flour, its mixture with the flour of various grains, the chestnut without mixture, the process used in Corsica to make chestnut bread, without mixing any other substance, the preparation used in Limousin to cook the chestnut and the advantages of this fruit prepared in the Limousin way. The last chapters offer supporting documents.

This copy is part of a dummy collection. It is incomplete of the title page and of the twenty-six pages of warning in which Parmentier defended himself from the attacks made against him and his works by the lawyer and publicist Simon-Nicolas-Henri Linguet (1736-1794).
