[JACQUEMIN (André)] - BRILLAT-SAVARIN (Jean Anthelme). Physiology of taste or meditations on transcendental gastronomy. A theoretical, historical and topical work dedicated to Parisian gastronomes by a professor and member of several literary and learned societies. Typeset by Pierre Bouchet. Paris : Flammarion, 1951. -2 volumes in-4, 325 x 251: (4 ff. first 2 blanks), XXXVIII pp., (1 f.), 228 pp., (10 ff. last blank), illustrated cover; (4 ff. first blank), 263 pp. (12 ff. last 2 blanks), illustrated cover. Leaves, filled cover, publisher's folder and slipcase. One of the finest illustrated works by André JACQUEMIN (1904-1992), printed in an edition of 245 copies on vélin pur fil du Marais, decorated with 168 original drypoints by the artist, including one on each cover, 2 full-page and the others in the text. Jacquemin had this to say about the work: "Henri Flammarion, who had entrusted me with the illustration of "La Naissance du jour" ten years earlier, came back to me with a major project: to illustrate Brillat-Savarin's "Physiologie du goût". It was a work of magnificent style, a manifesto of culinary art and the pleasures of the table, and a delicious collection of memoirs by an illustrious 19th-century chef. It was my longest battle: five years of work, one hundred and sixty-eight dry points. In addition to evoking products, dishes and terroirs, I decided to engrave the great figures of the gastronomy of my time: Curnonsky, Edmond Chaix, Doctor de Pomiane, Fernand Point." A portrait of Colette can be added to the list of people represented by Jacquemin. ONE OF THE FIRST 20 COPIES WITH 4 ORIGINAL DRAWINGS, A SUITE OF DRYPOINTS ON JAPON AND 15 REFUSED ETCHINGS. This copy is further enriched with one of the 3 proofs of the second state of the full-page engraving in the first volume, numbered and signed by the artist, and 4 states (second, third, fourth and fifth) signed by Jacquemin of one of the culs-de-lampe (page 71, volume 2), each proof justified 1/2. The first 3 states are justified by Jacquemin as "planche refusée". The fifth state is justified "cinquième et définitif état" (fifth and definitive state) and includes the bon à tirer signed by Flammarion.
